I think use of possessive 's in the word "happiness's" looks kind of massive...
If you mean "sound of happiness" - I would write it just like "happiness' sound" as usual for plurals or words ending with letter "s". But usage of construction "ss's" is OK since it is not prohibited and some authors insist on using this form for example in "boss's", "hostess's", etc. In those cases you can almost hear "bossEs", "hostessEs"... But in your verse/rhyme - it's not the case.
